Three delicious vegan desserts from our cookbook

Becoming Vegan doesn’t mean you have to give up delicious treats! Check out these 3 mouth-watering vegan desserts, all made with a little help from our award-winning oils.

The idea of going Vegan might appeal to some, especially when it might just be the key to solving climate change, but it’s also very hard to give up tasty, delicious desserts.

But fear not! Vegans can have their cake AND eat it!

We’ve collected these three delicious vegan desserts from our amazing cookbook, so all Vegans with a sweet tooth can enjoy an after-dinner treat – guilt-free of course!

Banana Chocolate Peanut Butter Frozen Bites

These simple yet incredibly tasty treats are perfect for a group of people to help themselves to after dinner or make great little bite-sized treats for kids. They take a couple of hours to settle though, so a wee bit of forethought is needed.

Banana chocolate peanut bites

Ingredients

  • 4 bananas
  • 10 tsp peanut butter
  • 2 tbsp Extra Virgin Coconut oil
  • 1 100g / 3.5oz block dark chocolate
  • 1 tbsp coconut sugar
  • 1 tbsp cocoa
  • Sea salt to taste
  • 50g / 1.7oz peanuts – chopped and toasted

 

Method

Start by lining a large, freezable container with baking paper, before chopping each banana into 1.5cm / 0.5in rounds. Lay half of them face down in your tray, and then spoon half a teaspoon of peanut butter on top. Finish by topping with the other half of the banana. Freeze for at least 2 hours (overnight if possible).

In the microwave on a low wattage or over a bain-marie, melt the chocolate and Olivado EV Coconut oil together. Whisk in the sugar and cocoa until you have a smooth chocolate mixture. Add any extra sugar and salt to taste. Let cool slightly.

Have another lined plastic container ready. Get your frozen banana bites from the freezer and quickly dip each bite in your chocolate mixture one by one topping them with the chopped nuts as you go before the chocolate dries. Once you have dipped and sprinkled them all, place them back in the freezer for at least an hour. These can be kept in the freezer in an airtight container for up to 2 weeks!

Crunchy Baked Apple & Pineapple stacks

Fruit is high in fructose, a natural sugar, making them sweet enough for any dessert! This gorgeous recipe takes two of nature’s most delicious fruits, apple and pineapple, to create a delicious treat for the whole family.

Baked apple and Pineapple

Ingredients

  • 4 apples -sliced into 3 horizontally through the centre
  • 2x 234g / 8.2oz tins Pineapple slices in syrup
  • 50g / 1.7oz ground almonds
  • 50g / 1.7oz coconut shavings
  • 50g / 1.7oz oats
  • 50g / 1.7oz pumpkin seeds
  • 3 tbsp Coconut sugar

 

To serve

  • A drizzle of honey
  • 1 tub natural coconut yoghurt
  • 1 lemon zest and juice
  • 1 tsp Cinnamon
  • 2 Tbsp Coconut oil – melted or Liquid coconut oil

 

Method

Preheat the oven to 180°C / 355°F.

Start by mixing in the almonds, coconut shavings, oats, seeds, sugar, cinnamon and Olivado Coconut oil together in a small bowl.

Line a baking tray with non-stick baking paper. Trim the bottom slice of each apple so it stands upright. Put both on the tray and top each slice with a spoonful of the crumble mixture. Repeat the layers with remaining mixture alternating apple slices with pineapple slices, finishing with the apple tops. Press down gently, then bake stacks for 25 minutes or until apple is just soft.

Mix the coconut yoghurt with lemon juice and zest and serve alongside the hot apple pineapple crumble masterpieces.

Fruity Dessert Pizzas

A pizza with a difference! This mouth-watering dessert is a fun way to end a meal, especially for kids. Bananas, chocolate chips, coconut, raspberries… what more could you ask for!

Vegan pizza dessert

Ingredients

  • 4 small pita breads
  • 4-5 Jazz apples, core removed and grated
  • 1 Tbsp liquid honey
  • 1 tsp ground cinnamon
  • 2 Tbsp Olivado Macadamia Nut Oil
  • 1-2 bananas, sliced
  • ½ cup white chocolate chips
  • ½ cup coconut yoghurt
  • ¼ cup freeze-dried raspberries
  • Garnish with mint, if desired

 

Method

Preheat oven to 200°C / 390°F fan bake.

In a saucepan place the grated apple, honey and cinnamon and cook stirring continuously over medium-high heat for 5-10 minutes or until the apples are soft.

On a baking tray, lay down the pita bread. Drizzle with Olivado EV Macadamia nut oil, then spread the apple mixture over the bases. Sprinkle banana and chocolate chips, then bake in the oven for 5-10 minutes.

Once cooked, remove from the oven. Before serving, add drops of coconut yoghurt and crumble over the dried raspberries. Serve immediately.
