Roasted Kumara & Cauliflower with Curry Dressing Recipe

 300 g Kumara, diced
 300 g cauliflower, cut into florets
 3 tbsp Extra virgin avocado oil, divided measure
 2 spring onions, sliced
 1 clove garlic crushed and sliced
 30 g Spinach
 3 g sliced almonds
 1 ½ tsp curry powder, divided measure
 6 g flat leaf parsley
 6 g coriander
 Salt and pepper to taste
For the dressing
 3 tbsp coconut yoghurt or Japanese mayo
 1 tsp curry powder
 Squeeze of lemon juice
 Salt and pepper

Preheat the oven to 200dc. Place the cauliflower and kumara into an oven tray and drizzle over 2 tbsp of the oil. Season and sprinkle over the curry powder, add half the spring onions and garlic and combine. Roast for 20m or until just cooked through. Remove and add the spinach, return to the oven for 2 minutes.

Meanwhile heat a fry-pan on a med heat and add remaining oil. Toss in the almonds remaining curry powder and season. Cook until nice and golden, stirring often.

Combine the dressing ingredients in a small bowl, set aside.

Remove cauli and kumara, add the almonds and herbs. Drizzle over the dressing and serve.
