Everyone loves a good muffin. They're easy, quick, and delicious!
Perfect for afternoon tea, a packed lunch, or something to grab on the way out the door, these muffins combine macadamia nuts and apple crumble to make something truly special.
Heat oven to 220 degrees C
Gently combine dry ingredients and make a well in the centre. Add the buttermilk and oil along with a little water and combine to create a nice batter consistency.
Heat a small fry pan over a med heat and when hot add the butter, as it froths add in the apple and cook to just soften, 3 minutes. Sprinkle over a little sugar and remove to cool slightly.
To make the topping simply combine all ingredients and set aside.
When the apple has cooled simply fold through the mix and pipe into muffin cups. Place into the oven and cook for 3 minutes then turn heat down to 180dc. cook for a further 10 minutes, remove and sprinkle over the topping. Return to the oven and cook for 5 minutes or until a skewer comes out clean when pressed into the centre of the muffin.
Remove to cool, serve.
