3 eggs
160ml / 5.4fl.oz (2/3 cup) milk
3 tsp caster sugar
Liquid Coconut Oil
4 thick slices white bread
4 cooked streaky bacon rashers
Maple syrup, to serve
Suggested toppings: fresh mint, grilled banana and toasted coconut
1. Lightly whisk eggs in a bowl. Add milk and sugar, and stir to combine.
2. Warm liquid coconut oil in a large frying pan over medium-high heat. Dip bread in the egg mixture. Cook for 1-2 minutes each side or until golden.
3. Put the french toast slices on serving plates and top with crisp bacon, grilled banana if desired and a sprig of mint. Serve with maple syrup.
