Tasty Meatloaf with Mushroom Sauce

Ingredients

1kg lean minced beef
250g sausage meat
1 onion
1 tbsp Olivado Extra Virgin Avocado Oil
3 tbsp tomato sauce
2 tbsp fresh parsley, chopped
salt and freshly ground pepper

Mushroom sauce:
2 tbsp Olivado Extra Virgin Avocado Oil
200g fresh white mushrooms, sliced thinly
½ red onion, chopped
2 tbsp tomato paste
½ cup chicken stock
salt and freshly ground pepper

Method

Preheat the oven to 180°C. Put the mince and sausage meat in a bowl. Chop the onion finely and cook gently with the avocado oil in a small pan until soft and translucent. Mix the onion, tomato sauce, parsley, salt and pepper into the mince and sausage meat. Knead thoroughly until all the ingredients are combined. Shape into a neat loaf or place in a loaf pan. Cook for 1¼ hours until a skewer inserted into the meat comes out cleanly.

For the mushroom sauce, heat the avocado oil in a small pan. Add the mushrooms and onions. Cook until golden and soft. Add the tomato paste, stir through and tip in the stock. Simmer for 5 -10 minutes, season to taste and serve with the meatloaf and a large helping of creamy mashed potatoes.
