Egg Lemon Mayonnaise
1 Cup Olivado Avocado Lemon Zest
3-4 tbsps lemon juice
Zest of ½ lemon
Gently mix egg yolks in a food processor and add the Olivado Gold Lemon-infused avocado oil slowly (drop by drop) until the mayonnaise thickens. Add a tablespoon of lemon juice, then continue adding oil. Add extra lemon juice to taste. Add a pinch of salt.
Use the mayonnaise with barbequed prawn, crayfish, or scallop salads.
