Smoked Salmon Vinaigrette


Whole salmon
20ml Olivado Extra Virgin Avocado Oil
juice of lemon

150ml Olivado Extra Virgin Avocado Oil
50ml wine vinegar
1 tbsp balsamic vinegar
1 tbsp lime juice
1 crushed garlic clove
1 tsp mustard
pinch of sugar, salt and ground pepper


Place salmon on foil wrap, mix avocado oil and lemon juice together, drizzle over fish. Wrap foil around salmon, cook in oven at 200C for 40 minutes. For vinaigrette, mix all ingredients in a container with lid, shake vigorously. Drizzle vinaigrette over salmon, serve with salad side dish.
