Lemon Garlic Chicken and Potatoes

Ingredients

4 Waitoa free range chicken breasts
750kg potatoes
½ cup Olivado Extra Virgin Avocado Oil or Olivado Gold Lemon-infused
juice of 2 lemons
2 tsp dried basil
4 cloves chopped garlic
2tsp salt
1 tsp pepper
1 tsp oregano

Method

Place all ingredients, except chicken and potatoes, in bowl, mix well. Place chicken breasts into mixture, spoon over. Place chicken into glass ovenproof dish. Peel and cut potatoes into quarter wedges, soak in avocado oil mixture. Place potatoes in between chicken breasts, pour over remaining mixture. Cover with foil, place into oven pre-heated to (400F) for 75 minutes. Baste chicken, potatoes halfway through cooking. Serve with salad side dish.
