4 steamed or grilled fillets snapper
½ cup Avocado Oil or Lemon infused avocado oil
1 bunch flat leaf parsley
½ bunch coriander
1 Tbsp capers
2 cloves peeled garlic
3 Tbsp lemon juice
750g / 1.6lb new potatoes
1. Steam or grilled snapper fillets and boil new potatoes. For salsa, place parsley, coriander, capers, garlic, lemon juice into food processor and blend for 1 minute.
2. Add avocado oil until salsa forms even, thick consistency. Serve salsa on top of steamed fillets, over the new potatoes, drizzled with avocado oil.
