Smoked Salmon Pate

 

150g / 5.2oz cream cheese
1 Tbsp Organic Olive Oil, plus more to drizzle
1 Tbsp butter
2 shallots, finely diced
1 clove garlic, finely diced
Salt and pepper to taste
1 tsp lemon zest
1 Tbsp chopped parsley
3 sprigs of thyme, chopped
200g / 7oz hot smoked salmon, flaked
25g / 0.8oz butter to top pate
300ml / 10fl.oz jar with lid
Parsley leaves for garnish

For Baguette
1 baguette, a day old and thinly sliced into rounds
1/4 cup Organic Olive Oil
2 cloves garlic to rub over bread
