Lamb koftas

Koftas are a spiced middle eastern meatball, full of flavour. Paired with hummus this healthy and tasty meal is an easy weeknight meal. Leftovers make for a great lunch the next day too. Serve with couscous and fresh salad.

Lamb Kofta Recipe

 500 g Lamb Mince
 ½ red onion, finely chopped
 1 clove garlic, crushed
 ⅓ cup Mint, roughly chopped
 ⅓ cup Italian Parsley, roughly chopped
 2 tbsp pine nuts
 1 tsp cumin
 ¼ tsp cardamom
 ½ tsp cinnamon
  ½ tsp allspice
 ½ tsp salt
 ¼ tsp pepper
 1 tbsp Avocado Oil and Garlic
To serve
 200 g hummus
 1 tbsp Avocado Oil and Garlic
 ¼ cup Italian Parsley
 2 tbsp dukkah
 salt and pepper to taste
 couscous salad

Preheat the oven to 200°C. Line a baking tray with baking paper and set aside.

Place all kofta ingredients into a large bowl. Mix until well combined.

Roll onto 6cm long ovals much like a rugby ball. Place onto the prepared baking tray.

Cook in the oven for 15–20 minutes or until golden brown.

Serve koftas over hummus, with salad on the side. Sprinkle Italian parsley leaves on top. Drizzle oil. Season with salt, pepper and dukkah.
