How to make FreshLife Smooth Caramel Slice

Whilst this looks like a lot of steps, this slice in a box is so simple to make we have made it with young children, and it's finger-licking yummy!

FreshLife - Smooth Caramel Slice Recipe

 1 box FreshLife Smooth Caramel Slice
 5 ½ tbsp Coconut cooking oil

Remove the Cacao Base Mix, Caramel Layer Mix and Dark Chocolate Chops from the box. Line the base and sides of the box with baking paper and set aside.

Empty the Cacao Base mix into a small bowl. Add 2 tbsp of melted coconut oil and mix until well combined.

Using a metal spoon, press the mixture firmly and evenly into the base of the box.
Close the box lid and place in the freezer for 20 minutes or until firm.

In the meantime, pour the Caramel Layer Mix into a blender and blend until you have a fine, flour-like consistency.

Add 2 ½ tbsp of melted coconut oil and 2 tbsp of hot water and blend until a smooth, thick mixture has formed. Scarpe down the sides of the blender with a spatula a few times to ensure that the mixture is evenly blended. Add 2-3 tbsp of water to help combine the ingredients.

Using a metal spoon, spread the caramel mixture evenly over the base layer.

Close the box lid and place in the freezer for 20 minutes or until the caramel mixture has set.

Add the Dark Chocolate Chips and 1 tbsp of coconut oil (unmelted) to a small microwave safe bowl. Microwave for 30 seconds, remove and stir until the chocolate has fully melted.

Pour the chocolate mixture over the caramel mixture and place in the fridge for 1 hour or until set.

To serve, carefully cut the Smooth Caramel Slice into 8 pieces. For best results, serve the slices straight from the fridge as they will soften at room temperature. Enjoy!

Tips

We used a 18x20cm piece of baking paper.

Use a heated knife [run knife under boiling water] to slice through the top chocolate layer. This will stop it breaking.
