Beef with Guinness and Chocolate

500g / 1.1lbs casserole beef, cut into chunks
1 medium sized onion, sliced
1 can (440ml / 15fl.oz) Guinness
2 tablespoons Extra Virgin Avocado oil
Salt & pepper
30g / 1oz dark chocolate cream or sour cream to serve

1. Slice onion thinly. Cut beef in 3-4 cm cubes and season generously with salt and freshly ground black pepper.
 
2. Heat Olivado Extra Virgin Avocado Oil in a sauce pan over medium heat. When hot add onion and stir fry until onion is soft and brown. Add beef. Cook until the beef changes colour.
 
3. Add Guinness. Bring to boil. When it is just boiling skim the surface and reduce the heat to low. Simmer for 50-90 minutes until the beef is tender.
 
4. When the beef is done, turn the heat off and add the chocolate. Leave for it to melt for a few minutes and stir.
 
Serve with a teaspoonful of cream or sour cream accompanied by mashed potato and steamed vegetables.
