A starter, main and dessert, delicious warming and comforting food perfect for cold winter nights that tastes great and easy to put together.

As we head into the middle, coldest and darkest part of winter, it’s worth remembering that it only lasts a couple of months, and spring is just around the corner!

But winter doesn’t have to be all bad. Curling up on the sofa watching a movie with a blanket wrapped around you and a hot chocolate is something you can’t do on a muggy summer evening!

Chicken Soup

Chicken soup cures any ailment, or so they say! There’s no doubt it warms you up from within, and the best part is, it can be made from the leftovers from the Sunday chicken roast!

This recipe only takes about 20 minutes to make from start to finish and is the perfect starter for our winter evening.

Chicken soup starter perfect food for cold winter nights

Ingredients

  • ¼ cup ginger, freshly grated or shredded
  • 2 carrots, grated
  • 3 spring onions, green and white separated, sliced lengthways
  • 2L / 68fl.oz chicken stock, homemade is best
  • ½ cooked chicken, shredded
  • 2 tsp soy sauce or more to taste
  • 2 tsp fish sauce or to taste
  • 2 tsp Extra Virgin Sesame oil
  • 1 cup coriander
  • Salt and pepper to taste

Method

Place the stock, white parts of the spring onions and ginger into a large saucepan and bring to a boil. Add the chicken, soy, fish sauce, sesame oil, simmer 2-3 minutes. Adjust seasoning with salt and pepper.

Roasted Beef Fillet

Choosing the meat for our winter night menu wasn’t difficult. This roast beef fillet marinated in soy sauce, manuka honey, sesame oil, garlic and ginger was the obvious choice.

Throw in some roast potatoes, carrots and parsnip, and you’ve got a recipe you’ll turn to again and again!

Ingredients

  • 1⁄4 cup soy sauce
  • 1 Tbsp manuka honey
  • 1 tsp Extra Virgin Sesame oil
  • 2 cloves garlic, crushed
  • 1 tsp grated ginger
  • 1kg / 2.2lbs beef fillet, trimmed of all sinew
  • 1 Tbsp Natural Avocado oil
  • 1⁄4 cup sweet chilli sauce
  • Big handful each of fresh coriander, Thai basil and parsley, chopped

Method

Combine the soy sauce, honey, sesame oil, garlic and ginger in a shallow dish. Place the beef in the marinade and turn to coat it evenly. Cover the beef and place it in the fridge to marinate for up to 2 hours turning occasionally.

Preheat the oven to 190°C / 375°F.

Remove the beef from the marinade and pat it dry. Discard the marinade. Heat the oil in a large frying pan over a medium-high heat. Add the beef and sear it on all sides. Make sure it gets a good colour as that will make all the difference.

Transfer the beef to a roasting tray and roast in the oven for 15–20 minutes, or until cooked to your liking. Set the beef aside to rest for 5 minutes.

Just before serving, spread the chopped coriander, basil and parsley over a large sheet of baking paper. Brush the beef with the sweet chilli sauce and roll it in the herbs, pressing down to coat evenly.

Rest the fillet well to ensure the juices remain in the meat.

Chocolate Coconut Mug Cake

And for dessert we have… a work of art!

The perfect end to our 3-course meal, these chocolate coconut mug cakes only take 5 minutes to whip up. Enjoy at the table or cuddle up in front of the TV after dinner, the choice is yours!

Hot chocolate mud mug - perfect food for cold winter nights

Ingredients

  • 4 Tbsp flour
  • 3 Tbsp liquid coconut oil preferably [or solid coconut oil]
  • 3 Tbsp coconut sugar
  • 3 Tbsp dark chocolate chips
  • 2 Tbsp cocoa
  • 2-3 drops vanilla extract
  • 1 egg
  • 3 Tbsp milk (coconut or dairy)

To serve: coconut yoghurt or ice cream

Method

Add dry ingredients to a coffee mug and mix well with a fork.

Add the egg and mix thoroughly.

Pour in the milk, oil, and vanilla and mix well, being sure to scrape the edges of the cup to incorporate all the dry ingredients.

Add the chocolate chips and mix again.

Place the mug in the microwave and cook for 3 minutes on high.

The cake will rise over the top of the mug and then sink down when the microwave is turned off. Allow to cool a little, then tip out onto a plate. Run a knife around the edge if it doesn’t slide out easily. Serve with coconut yoghurt or ice cream.
