Tuna Tataki with Avocado and spring onion

½ cup chopped coriander
2 spring onions, sliced into rounds
½ jalapeno, sliced
1 tsp grated fresh ginger
1 garlic clove, grated
2 limes, juiced
2 Tbsp soy sauce
Pinch sugar
Sea salt and freshly ground black pepper
2 Tbsp Olivado Organic extra-virgin olive oil, divided measure
180g / 6.3oz block sushi-quality tuna, diced
1 ripe avocado, halved, peeled, pitted, and diced

1. In a mixing bowl, combine the coriander, spring onion, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper and olive oil. Stir the ingredients together until well incorporated.

2. Season the tuna generously with salt and pepper. Add the tuna to the sauce and combine. Gently fold in the avocado. Serve a couple of generous spoons per person and drizzle with remaining sauce if needed.
