Salted Almond Butter Fudge

Want to make some healthy, raw treats as Xmas pressies? Then we’ve got you covered. This deliciously gooey fudge is raw and vegan. Giving homemade fudge is a thoughtful personal gift that your loved ones will devour. Be sure to double (or triple!) the recipe so you can have some for yourself.

Salted Almond Butter Fudge

 230 g [1 jar] almond butter
 5 Medjool Dates, pitted & soaked in hot water
 1 tsp Organic Extra Virgin Coconut Oil
 4 tbsp Maple syrup
 1 tsp Vanilla bean paste
 ⅓ cup Cacao powder
Topping
 1 tsp Sea salt flakes
 ⅓ cup slithered almonds

Line and grease a small baking dish or tin.

Add all fudge ingredients to a blender and blitz until smooth. (You may need to pulse your blender if it is not high speed.) Press into the prepared dish.

Sprinkle with topping and press down with your hands or a spatula. Pop in the fridge to set, for at least an hour, then slice into delicious squares. (It’s best to store them in the fridge.)

Tip 1: You can try new flavours by adding ½ tsp ginger powder or changing the vanilla paste to ½ tsp peppermint extract. Feel free to sprinkle the top with other nuts or freeze dried fruit powders.

Tip 2: These can be rolled into balls for delicious fudgy bliss balls instead.
