Rainbow Tomato Salad
Bursting colours and tastes, this aptly named rainbow tomato salad showcases beautiful and tasty tomatoes, mingled with their flavourful friends.
Perfect for a light lunch, it only takes 10 minutes to make and serves 6 people!
Ingredients
- 1 small box of tomatoes, whole, halved or quartered
- 1 small box Angel tomatoes
- 1 Red onion, thinly sliced, soaked in water for 5 minutes and squeezed out excess water
- ½ Cucumber, ribboned
- A handful of Basil leaves
- A handful of Purple Basil leaves
- 1 pot (125g) Cherry Bocconcini
- 3 tbsp Black olives, pitted and halved
Dressing
- ⅓ cup Extra Virgin Olive Oil
- 3 tbsp White Wine Vinegar
- 1 tsp Liquid honey
- 1 tbsp Oregano, leaves only chopped
- Salt and pepper
- Serve with crusty bread
Method
In a large bowl, place all salad ingredients.
Make the dressing: in a jar or a bowl, combine all dressing ingredients. Mix well.
Toss salad with dressing and serve.

Haloumi and Beetroot Salad
Haloumi is a popular meat substitute due to its high melting point. Made from a mixture of goat’s and sheep’s milk, it can easily be fried or grilled. Packed with essential nutrients, beetroots are a great source of fibre, vitamin B9, manganese, potassium, iron, and vitamin C.
Put all this together and you’ve got a winning salad on your hands that’s quick and easy to make!
Ingredients
- 2 tablespoons Avocado Zest Oil
- 1 block halloumi cheese
- 1 bag fresh beetroot
- 150g / 5.2oz Heirloom tomatoes, halved (this is about 4 medium-sized)
- 1/4 cup vinaigrette
- Microgreens, edible flowers and/or herbs to garnish
Method
Heat your BBQ hotplate to medium-high heat.
Drizzle avocado oil when ready to cook.
Sizzle whole baby beetroot until warm and coloured then set aside.
Cook the block of Haloumi whole on the hot plate in the beet juices.
Get your serving plate and place the cheese in the middle. Then slice it into 4 pieces across the block of halloumi.
Top with the halved beetroot and tomatoes and drizzle a little more lemon avocado oil, then the vinaigrette.
Top with microgreens, herbs and edible flowers as desired.
Caprese salad
Caprese salads are a simple Italian salad, made of sliced fresh mozzarella, tomatoes, and sweet basil, and is green white and red to mimic the Italian flag. Bocconcini, meaning “little bites” in Italian, are egg sized mozzarella balls, but you can use any kind of mozzarella in this recipe.
Ingredients
- 2 punnets cherry tomatoes
- 6 cloves garlic, peeled and slightly crushed
- 350g / 12oz dry large pasta spirals
- 250g / 8.8oz tub fresh bocconcini
- 1 cup fresh basil
- Extra Virgin Olive Oil
- 3 tablespoons balsamic glaze
- Salt and pepper
Method
Preheat the oven to 190ºC / 375ºF degrees fan bake.
In a baking dish, spread out the cherry tomatoes and garlic cloves. Season, drizzle with oil, then roast for 15-20 minutes or until the skins have blistered. Set aside.
Cook the pasta as per packet instructions, drain, and then place it into a bowl.
Add the roasted tomatoes and garlic to the pasta, then use your hands to tear the bocconcini into the mix, followed by the torn basil.
Pour over a generous drizzle of Olivado organic extra virgin olive oil then toss to combine.
Season with salt and pepper and serve warm with the balsamic drizzle.
