400g / 14oz Beef, Chicken, Lamb – sliced into pieces across the grain

2 large shallots
2 cloves garlic
2 stalks lemongrass
1 chilli
1 tsp turmeric
1 tsp cumin seeds, toasted & ground
1 tsp fennel seeds
2 tsp palm sugar
1 tsp thick soy sauce

BASTE:

1/3 cup coconut cream
1 tsp Peanut oil
2 tsp brown sugar
Combine, set aside

1. Pound all the marinade ingredients into a paste using a mortar & pestle.
Place meat into a shallow dish and cover with marinade for up to 60 minutes. Once marinaded place on skewers.

2. Heat BBQ until hot. Place on the skewers and cook for 1-2 minutes each side. Baste the mix every 20-30 seconds until cooked through.

Note: Always soak the skewers in water first.
