Yields1 Serving

700-800g / 1.5-1.7lbs Pork mince
1 tablespoon Peanut Oil
3 cloves garlic chopped
1 teaspoon chilli flakes
1 stalk lemongrass smashed
2 tablespoons fish sauce
2 tablespoons brown sugar
1 lime
5-6 mint leaves, torn
1/2 cup fresh coriander, leaves torn
1/2 red onion
2 cups Rice 
2 heads cos lettuce to serve

  1. Heat Extra virgin Peanut oil in a frying pan over medium heat. Add garlic, chilli flakes and lemongrass. When fragrant add pork mince and cook it stirring frequently.
  2. When the pork is cooked, add brown sugar, fish sauce and juice of 1/2 lime. Mix through chopped red onion, mint and corriander. Set aside.
  3. Cook Rice
  4. Mix rice and pork mince.
  5. Serve on lettuce leaves with more squeeze of lime and chilli if desired.
