700-800g / 1.5-1.7lbs Pork mince
1 tablespoon Peanut Oil
3 cloves garlic chopped
1 teaspoon chilli flakes
1 stalk lemongrass smashed
2 tablespoons fish sauce
2 tablespoons brown sugar
1 lime
5-6 mint leaves, torn
1/2 cup fresh coriander, leaves torn
1/2 red onion
2 cups Rice
2 heads cos lettuce to serve
- Heat Extra virgin Peanut oil in a frying pan over medium heat. Add garlic, chilli flakes and lemongrass. When fragrant add pork mince and cook it stirring frequently.
- When the pork is cooked, add brown sugar, fish sauce and juice of 1/2 lime. Mix through chopped red onion, mint and corriander. Set aside.
- Cook Rice
- Mix rice and pork mince.
- Serve on lettuce leaves with more squeeze of lime and chilli if desired.
