4 chicken breasts or thighs, sliced into strips
1 red onion, cut into 2cm / 0.8in pieces
Skewers, soaked in water
Marinade
¼ cup Avocado oil with Garlic
¼ cup balsamic vinegar
2 Tbsp soy sauce
2 Tbsp Worcestershire sauce
Juice of half a lemon
¼ cup brown sugar
1 Tbsp rosemary
1 Tbsp Dijon mustard
½ tsp ground black pepper
1. Combine all marinade ingredients in a large ceramic dish. Stir until the sugar has dissolved. Add chicken, cover and refrigerate.
2. Marinade for at least an hour or overnight. Remove the chicken from fridge. Take a skewer and thread a piece of onion followed by a strip of chicken. I like to thread the chicken on and push it down the skewer to fasten. Repeat with onion and chicken for remaining pieces until all used up. Reserve the marinade.
3. Heat your BBQ or grill on high, when hot turn down to medium and add the skewers. Take a brush and every now and then baste the skewers until cooked through.
