2 cups self-raising flour
¼ cup sugar
¼ tsp salt
Grated rind of ½ a lemon
1 cup orange juice
¼ cup Lemon Infused Avocado oil
1 egg
1. Mix flour, sugar and salt in large mixing bowl. Into another bowl, whisk: Lemon rind, orange juice, egg and oil. Add the liquid, mix into the dry ingredients, folding gently until flour is damp. Be careful not to over-mix.
2. Rub Macadamia Oil into a 12-muffin tray and spoon in the mixture. Bake at 220ºC / 430°F for 10-to-12 minutes.
If you wish to add a little extra tang, try slicing 3 thin slices off the lemon, quarter them and press into the top of the muffins before cooking.
