It’s time to slip on your jandals, slap on some sunscreen, and fire up the barbie!
Summer is here and it’s set to be a scorcher, and after that miserable winter, no one’s complaining!
To celebrate our wonderful Kiwi summer we’ve gathered these three recipes you can cook on the BBQ, all with a little help from our delicious cooking oils.
So break out your silliest apron and invite your friends round for an afternoon of delicious food!
BBQ Fish and Avocado Oil Sauce
The catch of the day always tastes better on the barbeque, and can only be improved if you were the one who caught it!
This ridiculously simple recipe works with any fish and turns it into a culinary delight by basting it in our amazing avocado oil. Squeeze some lemon juice over it and a wee sprinkle of sea salt and you’re ready to impress! No fuss with this one – easy, quick, natural, simple and absolutely delicious!
Ingredients
- Whole fish
- Lemon juice
- Sea salt
- Avocado Oil Basting Sauce
- 2 cups Extra Virgin Avocado Oil
- 1 cup lemon juice
- Oregano
- Sea salt
- Freshly ground pepper
Method
About an hour prior to the barbeque, pour lemon juice over the fish and turn to moisten, then sprinkle with sea salt and place in the refrigerator. To make the basting sauce, whisk avocado oil and lemon juice in a bowl, add oregano, sea salt and freshly ground pepper.
Place fish on hot barbeque grill and baste well with sauce as it cooks, turning to ensure both sides are basted. To serve, pour some of the basting sauce over the fish and accompany with salad or rice.
BBQ Chicken and Peach Salad
Salads are great during the summer months, and this one is a peach!
Light, tasty and easy to make, this recipe is filling and satisfying but doesn’t make you feel overfull. And as we all know, chicken on the BBQ is not only easy to cook, but has that delicious barbecue flavour which gives it that unique taste.
Ingredients
- 4 chicken thighs or 2 chicken breasts
- 2 fresh peaches
- 4 handfuls baby spinach or rocket leaves
- 2 tablespoons lemon juice
- 2 tablespoons Extra Virgin Olive oil
- Salt and freshly ground black pepper
- 1/4 red onion, peeled and thinly sliced
- A handful of pine nuts
- 100g / 3.5oz feta
Method
Preheat the BBQ to a medium-high heat. Cut the peaches in half, remove the stones, and cook on the grill for 5 minutes or until the peach just begins to soften. Remove from the pan, then cook the chicken until completely cooked through and golden.
Slice the chicken and peaches, then place in a large bowl with the salad leaves and red onion. Pour over the lemon juice, oil, salt and pepper. Use your clean hands to mix all ingredients together and then heap onto plates and sprinkle over the pine nuts and feta. Delicious!
BBQ Avocado and Ginger Prawns
Throw another shrimp on the barbie!
Or something.
We’re not sure, that’s an Australian thing, and we don’t go in for that nonsense.
What we do know however is that this recipe is gorgeous and is perfect as a shared starter during a barbeque, so tuck in!
Ingredients
- 3/4 cup of Extra Virgin Avocado Oil
- Juice of 1 large lemon
- 1/3 cup of soy sauce
- 2 tbls of honey
- 3 garlic cloves (crushed)
- 2 tsp grated ginger
- 1 tsp of ground majoram
- 1kg / 2.2lbs of fresh prawns (shelled)
Method
Mix the avocado oil, lemon juice, soy sauce, honey, crushed garlic, ginger and marjoram in a bowl, then add the prawns and stir well. Cover and place in a refrigerator for 24 hours, turning occasionally.
Thread prawns onto skewers and cook over barbeque, brushing with avocado oil before serving with cooked rice or salad, garnish prawns with lemon juice.
