Marinade
2 tsp ground coriander
1 tsp chilli powder
¼ tsp turmeric
½ tsp garam masala
½ tsp salt
3 cloves garlic, mashed
2cm / 0.7in knob ginger, grated
3 cloves
1 cinnamon stick, broken into 2
2-3 Tbsp Extra Virgin Avocado oil
700g / 1.5lb lamb cutlets or shoulder chops
To garnish
small bunch coriander, roughly chopped
1. Preheat the oven to 180°c / 355°F. Combine marinade ingredients in a ceramic dish and drizzle over the oil. Give everything a good mix, then add the chops and combine. Leave to marinade for 30 minutes, (overnight is always best).
2. Cook the chops for 10-17 minutes depending on how you like them. Remove to rest, sprinkle with fresh coriander to serve.
