This wonderful mayonnaise recipe with Olivado Avocado Lemon Zest goes great with BBQ prawn, crayfish, or scallop salads. Read the full recipe here:
1 Cup Avocado Lemon Zest oil
3-4 Tbsps lemon juice
Zest of ½ lemon
1. Gently mix egg yolks in a food processor and add the Olivado Lemon Zest oil slowly (drop by drop) until the mayonnaise thickens. Add a tablespoon of lemon juice, then continue adding oil. Add extra lemon juice to taste. Add a pinch of salt.
Use the mayonnaise with barbequed prawn, crayfish, or scallop salads.
