750g / 1.6lbs medium potatoes
¼ cup Extra Virgin Avocado Oil
Chopped rosemary (or use Olivado Avocado Oil infused with Rosemary]
Salt and pepper

1. Peel potatoes and cut in half, dry on paper towel.

2. Place in roasting pan, sprinkle with avocado oil, rosemary (or use Olivado Avocado Oil with rosemary).

3. Season with salt and pepper. Cook in oven at 190°C / 375°F until golden crisp. We usually find about 40 minutes. (this recipe may be used for all roast vegetables).
