This mouth-watering Bacon and Potato Hash meal can be knocked up in no time at all and makes a perfect lunch. Check out the recipe here:
Extra Virgin Avocado oil
Half an onion, finely chopped
200g / 7oz cooked bacon strips, diced
2 cups cooked potatoes, cubed
1 tbsp worchester sauce
2 tbsp fresh parsley, chopped
To serve: fried egg and avocado
1. Bring a heavy based pan to a medium heat with a generous drizzle of Olivado Avocado oil. Once hot, saute the onion until it comes translucent. Set aside in a bowl.
2. Add more oil to the pan, and fry the ham and potato until crispy and golden. Return the onions to the pan, and stir through with the worchester sauce.
3. Sprinkle with parsley before serving, and top with a fried egg and avocado.
