Chocolate Easter Waffles

This recipe is a delicious dessert or sweet treat for an Easter party. It takes a little bit of prep, but good things come to those who wait!

 Chocolate waffles

Ingredients

  • 1 cup plain flour
  • 2 tablespoons cornflour
  • 1 teaspoon baking powder
  • 2 tablespoons cocoa
  • 1 teaspoon ground mixed spice
  • 80g caster sugar
  • 1 cup coconut milk
  • 3 tablespoons Olivado liquid coconut oil
  • 2 eggs, separated

 

For the Chocolate and honey drizzle

  • ½ cup honey
  • 2 tablespoons caster sugar
  • ½ cup water
  • 50g dark chocolate, finely chopped
  • Vanilla ice cream to serve
  • Mixed berries to serve

 

Method

Mix the flour, cornflour, baking powder, cocoa, mixed spice and sugar in a large bowl. Add the coconut milk, coconut oil and egg yolks and whisk until smooth.

Place the egg whites in a medium bowl and beat until stiff peaks form, then gently fold into the flour mixture to combine.

Preheat a lightly greased waffle maker according to manufacturer’s instructions, and cook the waffles.

While the waffles are cooking, make the drizzle by placing the honey, sugar and water in a small saucepan over low heat, stirring to dissolve the sugar. Increase the heat to high, add the chocolate and mix to combine.

Bring to a simmer and cook for 3- 4 minutes or until syrupy, before serving the waffles with ice-cream, berries and chocolate drizzle.

Easter Pita French Toast

Ok, so Easter isn’t all about chocolate!

One morning why not treat yourself and everyone else to these incredible pita bread, french toast style. The bacon, fresh berries and scoop of ice-cream will fill and satisfy everyone!

French Pita Toast

Ingredients

  • 8 rashers bacon
  • 4 pita bread
  • 2 eggs
  • 1 can(400g) coconut cream
  • 1 tbsp raw sugar
  • 1 tsp ground cinnamon
  • salt
  • Olivado Extra Virgin coconut oil
  • Honey
  • 2 cups frozen mixed berries
  • Ice cream

 

Method

Heat the oven to 200C, then in a bowl, whisk together the eggs, raw sugar, coconut cream, cinnamon and salt.

Make a small incision in the pita bread and fill the centre with 3-4 tbsp frozen berries, before dipping into the egg mixture and letting soak for 5 minutes.

In a frying pan over medium heat, fry the french toast for at least 4-5 minutes on each side in a little coconut oil. Once completely golden and cooked through, the berries will have softened inside. Pop in the oven to keep hot and continue cooking through.

Fry the bacon over high heat until golden and crispy, before serving the french toast and bacon hot with a scoop of vanilla ice cream, some extra berries and a drizzle of honey. Yum!

Bliss Ball Easter Eggs

Perfect for a kid’s Easter egg hunt, these little treats are made to look like a bird’s nest with eggs in them. The dark chocolate is perfectly complemented with the tart raspberry coating of the cashew and almond nuts, and everything has a delicious coconut hint thanks to our liquid coconut oil.

Bliss Ball Easter Eggs

Ingredients

For the nests

  • 150g dark chocolate
  • 1 tablespoon Olivado Extra Virgin coconut oil
  • ½ teaspoon vanilla extract
  • Pinch of sea salt
  • 50 g shredded coconut
  • 50g sliced almonds, lightly toasted

 

For the Easter Eggs

  • ½ cup pitted dried dates, soaked in warm water
  • 1 1/2 cup raw cashew nuts, soaked in warm water
  • ½ cup ground almonds
  • 2 tablespoons cocoa powder
  • 2 tablespoons apple syrup
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons freeze-dried raspberries, crushed
  • We made the chocolate nests in a 12 cup muffin tray.

 

Method

Start by making the nests. Melt the dark chocolate and Olivado coconut oil in a heatproof bowl over a simmering pot of water, allowing it to melt completely. Stir in the vanilla and sea salt.

Mix the shredded coconut and almonds in the chocolate mixture and stir to combine. Scoop the mixture into a paper cup or greased muffin tin and spread around to make the nest shape. Place in refrigerator until it sets.

To make the Easter egg bliss balls, place all the ingredients in a food processor and process until everything combines and form a dough. Scoop the dough with a spoon and shape it with your hands into small ‘eggs’. Roll them in the freeze-dried raspberries to make pink eggs, then place them on a lined tray and refrigerate until set.

Place the bliss ball eggs in the nest to serve. Happy Easter!
