Life can get busy, so lovingly preparing and cooking a 2-hour meal isn’t always an option.
If you’re in a rush or held up at work and don’t get home until late, you need a recipe that is healthy and delicious and one you can knock up and enjoy within minutes.
Fortunately, we’ve got three delicious recipes for you to try, and you don’t have to skimp on the flavour or nutrition either!
15 Minute Cottage Cheese Alfredo Pasta (5 ways with cottage cheese)
Fettuccini is usually used for alfredo sauce as the long, thick strands soak up the delicious creamy sauce perfectly. This recipe, although quick to make, is very satisfying, making it perfect for a quick lunch to get your through the rest of the day, or a meal that you can put together quickly at the end of the day!
For the Alfredo Sauce:
- ½ cup cottage cheese
- ½ cup parmesan
- 1 cup milk
- 1 tbsp cornstarch
- ¼ tsp salt
- ¼ tsp ground pepper
- 1 clove garlic
- A handful of parsley, roughly chopped
For the pasta:
- 1 pack pasta
- 3-4 litre boiling water
- 1-2 tsp sea salt
- Splash of extra virgin olive oil

Cook pasta as per packet instructions until firm to the touch. Drain and set aside.
Place cottage cheese, parmesan, milk, corn starch, salt, pepper, parsley & garlic to a food processor and process until smooth.
Pour pasta sauce into a saucepan and simmer for 5 minutes. Stir and season to taste with salt and pepper.
Add the cooked pasta to the sauce. Sprinkle with more fresh parsley. Spoon into bowls and enjoy!
Chicken Fried Rice
Chicken and rice is the staple diet for half of the people around the planet, so it’s easy to misjudge this dish as something “basic”. In fact, because chicken and rice is such a simple dish, there are a thousand and one things you can do with it, as this simple recipe shows. You can remove the chicken from this one and serve it as a vegetarian dish!

- 3 cups cooked rice
- 2 eggs, beaten
- 1 cup cooked chicken breast, diced
- 2 spring onions, chopped
- A handful of chopped fresh coriander
- 2-3 tablespoons Extra Virgin Sesame oil
- Salt, pepper
- Dash of soy sauce
Heat EV Olivado Sesame oil in a wok on high heat. When the oil is hot, add eggs. When the eggs become soft and scrambled, take it out and put aside.
Add a dash more extra virgin sesame oil, then add the chopped spring onion to the wok. After a few stirs, add the cooked rice and then fry together. Put the egg and cooked chicken in the wok and continue to stir fry.
When the rice, egg, chicken and spring onions are mixed evenly, add soy sauce then season with salt and pepper.
Add fresh coriander and mix thoroughly as you remove from the heat.
Best Steak Sandwich
Nothing beats a nice piece of steak, and this steak sandwich is not only quick and easy to make, but tastes absolutely amazing with the Mayo and Dijon mixed sauce!

- 2 small pieces sirloin steak
- 1 tablespoon Natural Avocado Cooking Oil
- 2 large Portobello mushrooms
- 1 tablespoon Dijon mustard
- 2 cloves garlic, crushed
- 2 tablespoons mayonnaise
- Your favourite bread or bun x 2
- Handful fresh iceberg lettuce leaves
- 2 tomatoes, sliced
- 2 gherkins, sliced
Rub the steaks and mushrooms with Olivado Natural Avocado Cooking Oil and salt, cook on a heated barbecue plate, or in a fry pan, to for 4 minutes each side (for medium rare). Transfer to a plate and season with plenty of salt.
Mix mustard and garlic into mayonnaise. Halve your buns and spread all the bread slices with the mayonnaise mix.
Slice steaks and rest for a minute to let any excess juices run off. Assemble sandwich with torn lettuce leaves, tomato slices, sliced mushrooms, steak and then add the gherkins and season.
