Jan Bilton's Avocado, Rockmelon and Smoked Salmon Stack (serves four as a starter)
You need:
- ½ ripe rockmelon
- 1 large avocado
- 100g smoked salmon
- 2 tbsp each - Olivado Extra Virgin Avocado Oil, lemon juice; or, alternatively, use 4 tbsp of Olivado Gold Lemon-infused Avocado Oil
- sea salt to taste
- 4 sprigs basil
Peel halve, seed and thinly slice the rockmelon. Halve each slice.
Halve, stone, peel and slice the avocado. Stack the melon and avocado on four serving plates. Top with twists of smoked salmon. Drizzle with lemon juice and avocado oil (or just the lemon-infused avocado oil). Season with salt and garnish with basil.
