Egg Lemon Mayonnaise
There's nothing like home-made mayonnaise on summer salads. The lemon flavour of this recipe really brings the mayonnaise alive. Superb with fish salads.
You need:
- 3-4 eggs
- 1 Cup Olivado Gold Lemon-infused avocado oil
- 3-4 tbsps lemon juice
- Zest of ½ lemon
- Salt
Gently mix egg yolks in a food processor and add the Olivado Gold Lemon-infused avocado oil slowly (drop by drop) until the mayonnaise thickens.
Add a tablespoon of lemon juice, then continue adding oil.
Add extra lemon juice to taste.
Add a pinch of salt.
Use the mayonnaise with barbequed prawn, crayfish, or scallop salads.
