For centuries, in the olive oil producing countries, the new season’s first cold pressing of olive oil was an event worthy of celebration. . The new olive oil (known as “olio nuevo”) had distinctive flavor characteristics which only lasted a short time, and therefore was never commercially available, but rather would be rushed out to close friends and relatives of the oil producer. This “new oil” had an intense, biting, “peppery” flavor, which would dissipate after a few short months, giving way to the smooth, mellow flavor which characterizes most of the extra virgin olive oils that are widely available.

Scientific research now shows that the reason “olio nuevo” had such a distinctive flavor was due to the initial high levels of naturally occurring polyphenols in the oil, but drops dramatically after several months. What is also known now, is that many of the well-documented health benefits of olive oil originate not only from the high mono-unsaturated fat of olive oil, but from the high levels of polyphenols inherent in extra virgin olive oil.
