Steamed Snapper with Salsa Verde (serves four)
You need:
- 4 steamed or grilled fillets snapper
- ½ cup Olivado Extra Virgin Avocado Oil (or Olivado Gold Lemon-infused)
- 1 bunch flat leaf parsley
- ½ bunch coriander
- 1tbsp capers
- 2 cloves peeled garlic
- 3 tbsp lemon juice
- 750kg new potatoes
Steam or grilled snapper fillets and boil new potatoes. For salsa, place parsley, coriander, capers, garlic, lemon juice into food processor and blend for 1 minute. Add avocado oil until salsa forms even, thick consistency. Serve salsa on top of steamed fillets, over the new potatoes, drizzled with avocado oil.
