Pork Butterflies with Avocado Oil Salsa (serves four)
You need:
- 4 pork butterfly steaks
- ¼ cup lemon juice
- 2 cloves crushed garlic
- 2 tbsp mustard
- 2 tbsp Olivado Extra Virgin Avocado Oil
Salsa:
- 1 cup parsley sprigs
- 3 cloves garlic
- ¼ cup Olivado Avocado Oil (Extra Virgin or Olivado Gold Rosemary-infused)
- Salt and pepper
- 2 tbsp dry sherry
- 2 tbsp lemon juice
In a bowl mix lemon juice, garlic, mustard and avocado oil, brush steaks, marinade for 1 hour in refrigerator (covered). Salsa is made by mixing parsley, garlic, salt, pepper in food processor. Add avocado oil to make thick paste, then sherry and lemon juice to taste. Remove steaks from marinade, cook in pan on medium heat for 5 minutes each side, serve with salsa. (Steaks may also be BBQ'd.)
